بررسی تأثیر پوشش دهی گوشت گوسفند با موسیلاژ دانه کتان حاوی نانوامولسیون خوشاریزه بر افزایش مدت ماندگاری آن

چکیده
در تحقیق حاضر به بررسی کارایی پوشش‌دهی گوشت گوسفند با موسیلاژ دانه کتان حاوی نانوامولسیون عصاره خوشاریزه با هدف افزایش مدت ماندگاری آن در دمای یخچالی پرداخته شد. بدین ترتیب که عصاره گیاه خوشاریزه استخراج شده با حلال آب-اتانول، نانو درون پوشانی شده و در غلظت‌های ( 25/6، 50/12 و 25 میلی گرم بر گرم) به موسیلاژ دانه کتان استخراج شده اضافه شده و نمونه‌های گوشت تازه گوسفند در محلول پوشش‌دهی غوطه‌ورشدند. نمونه‌ها در بسته‌بندی‌های پلی اتیلنی بسته‌بندی به مدت 30 روز در دمای C˚ 4 نگهداری شدند. آزمون‌ها در فواصل زمانی 5 روزه (0، 5، 10، 15، 20،25 و 30) بر روی نمونه‌ها انجام شد. نتایج نشان داد که افزایش غلظت نانوامولسیون در پوشش‌ها، منجر به کاهش اُفت رطوبت نمونه‌ها شد. همچنین پوشش‌های حاوی نانو امولسیون عصاره خوشاریزه به میزان قابل توجهی از افزایش میزان pH، شاخص تیوباربیتوریک اسید، عدد پراکسید و نیتروژن فرار تیمارها نسبت به نمونه شاهد (C0) و نمونه پوشش دهی شده با موسیلاژ دانه کتان به تنهایی (C1) جلوگیری کرد. این تأثیر با افزایش غلظت نانو امولسیون‌ها درون پوشش مشهودتر بود. همچنین اثر پوشش‌های حاوی نانو امولسیون بر حفظ بافت و کاهش روند افزایش جمعیت میکروبی ملاحظه شد. طبق نتایج ارزیابی حسی، بکارگیری پوشش‌های حاوی نانو امولسیون بر ویژگی‌های حسی تیمارها اثر مثبت داشت. با در نظر گرفتن تمامی نتایج تیمار C4 (2 % موسیلاژ دانه کتان + mg/g 25 نانوامولسیون گیاه خوشاریزه) به عنوان تیمار برتر این تحقیق معرفی می‌گردد که قابلیت نگهداری گوشت گوسفند طی 20 روز در شرایط یخچال را داشت.
